Knuckles are, of course, the specialty here, and if you've never tried this succulent dish, now's your chance. Bean soup with knuckle is enough for a small meal but to really fill up, try the Baking Dish Knuckle: smoked, sliced pork knuckle fried with potatoes and smothered with a garlicky sour cream sauce and served in a baking dish with bacon bits sprinkled on top.
