Costa del Sol itinerary in August

My family of 4 (traveling with a 10 year old and 8 year old) are going to the Costa del Sol at the beginning of August for one week. We're staying near Cesares (near Estepona) and I'd like to get advice on some must do's. Here is what I have planned so far:
1. Day trip to Gibraltar
2. Caminito del Rey
3. Canyoning in Benhavis
4. Sherry tasting in Jerez
5. Beaches around Estepona and Marbella
6. Visit Ronda for a day

Are these all worth doing? How much time do I need for these activities? What else is fun to do for an outing? What other towns are nice to walk around for a day?

Get Air conditioning and a pool. It sounds mostly like a trip for adults. Hottest I have ever been was afternoons in that area in July and August. Make sure you have plenty of water with you at all times, and sun Hats. Do all hiking or outdoor sightseeing as early in the morning as is possible. Rest or pool time in the afternoon.
Expect to eat very late, 9:00 pm or later.
No Granada? It is beautiful and cooler than some other places.
Any fear of heights in the family? Do check length of hikes and temperatures.

I would skip Jerez. Seems like a long time time in a car (almost 4 hours roundtrip) with an 8 and 10 year old just to taste Sherry. It will be very hot in August and just think a better day could be spent in some great areas closer by.
